Bali, Indonesia: March 20 - 24, 2012

After a few days in Hong Kong, we hopped on a series of planes and went on our way to the island of Bali in Indonesia!  Bali is an incredibly beautiful island, I would recommend it to anyone who would like to see Indonesia. We stayed in Ubud, a city in central Bali. Most people stay on the Southern coast, but we really loved our location as it was a fantastic spot from which to explore most of the island and the city of Ubud was such a neat place.

Hong Kong: March 15 - 19, 2012

Our trip to Southeast Asia began in Hong Kong, where we met up with my sister-in-law and her boyfriend who were currently living there while teaching English (how cool is that?).  They showed us the best parts of Hong Kong and we toured like madmen for the few days that we were there before heading off to Bali, Indonesia.

I didn't really know what to expect when it came to Hong Kong, but I found that I really enjoyed it! We stayed at my sister-in-law's place which is actually on an island outside of Hong Kong, so spending our nights away from the constant hustle bustle may have helped us relax at the end of each busy day.

Here are some shots from our trip! I'll post the pictures from Indonesia and Thailand (yay elephants!) soon.

Blueberry Granola Muffins

OK! Time to get back on track! This whole posting around once a week thing doesn't sit to well with me, but I currently have no-one to blame but myself :) So no excuses, right? It is true that after we got over out jet-lag (AKA completely useless for a week around the house) spring cleaning kicked in so that is a bonus, but I haven't shared some delicious desserts and meals that are piling up in my iPhoto, and that's no fun.  What good is tasty food if you can't share it with anyone?

So I'll start off with something quick and tasty. Blueberry Granola Muffins! Yay muffins!

A Spring Birthday Cake - a Chocolate and Coffee lover's dream!

Right before we left on our trip I received this amazing box of goodies from Joy the Baker and King Arthur Flour. When we got back, it was my mother-in-law's birthday, and I knew this would be an amazing opportunity to use these new treats, and create something that I hoped she would love!

With these goodies came a recipe from Joy for Deep Dark Mocha Cupcakes. They sounded amazing! I also had a recipe for Annie's (of Annie's Eats) Chocolate Frosting bookmarked in my inbox (I am currently on a hunt for the best chocolate frosting recipe).  Deep dark chocolate cake + coffee buttercream filling + chocolate sour cream frosting?? Oh man, this was going to be good!
