Butterscotch and Chocolate Chip Muffins



Muffins! Who doesn't love a soft and tasty muffin for breakfast, or to kick that 'wall' we all hit at work in the middle of the afternoon?

You know what I realized? Butterscotch is delicious, and I do not think to use it in baking nearly enough.  After throwing butterscotch chips in these muffins, both my husband and I were surprised by how much we really loved them! Lesson learned, our lives need more butterscotch.

Bread for Burundi



Yesterday I was lucky enough to attend a fundraiser called Bread for Burundi with some of my 'newly' acquired family members.  We attended a bread making class at the amazing Treestone Bakery which is owned and run by Yvan Chartrand, and all funds went towards the development of education and the ability for families to become economically self-sufficient in Burundi, Africa.  (If you want to learn more about where the funds went, feel free to check out www.dufashanye.org!)

Banana Pecan Bundt Cake



This cake. Ohhh, this cake.  


Please make this cake.


I don't know if it is the pregnant lady talking or not, but this cake is pure heaven! It is the perfect texture, and the pecans work so well with the banana flavour. This cake doesn't even need any extra adornments! I'm sure a chocolate or classic glaze poured over the top would be amazing, but maybe try this cake without those, just once.  Just so you can appreciate how perfect it is!

Spring Time with the Pups (and a Surprise!)



Now that the weather is much nicer out, we have been spending a lot of time in the river valley here with our pups.  This spring Chloe decided that swimming is the best thing ever, and it isn't long before Banjo is jumping int a pond or the river right behind her!

Fried Egg Sandwiches



If you follow me at all on Instagram, then you might notice my love for a good fried egg sandwich.


I'm not even sure what it is about these beauties that is perfect every time, but throw a perfectly fried egg with it's runny, oozy yolk, onto some toasted bread and add some meat and/or veggies and VOILA! The perfect sandwich.

A Simple Baptism Cake



A couple weeks ago we attended a baptism for our friend's little boy where we were also honoured to be the Godparents! My girlfriend had asked if I could make a simple cake for the gathering afterwards so I decided to make something fitting for a little boy. 




This cake is a simple vegan vanilla bean cake that I filled with alternating layers of blue and yellow buttercream in order to match the outside of the cake.




I then covered the cake in vanilla fondant, and decorating it with some whimsical yellow, blue, and brown stripes and polka-dots. 




I really think this cake turned out cute, and judging by how fast it was disappearing I think it was just as tasty too!

Chocolate Caramel Cheesecake



Alright friends, this dessert, oohhh this dessert. It is everything it promises to be and so much more.  This is the first time I have perfectly (in my opinion) cooked a cheesecake that had no cracks AND I successfully made caramel from scratch! What a day!


The recipe I used was originally for a cheesecake more along the lines of a Turtle Cheesecake, but since we had some company with some extreme nut allergies we decided to forgo the pecans in favour of more caramel and more chocolate ganache. A pretty favourable exchange if you ask me!

Khao Lak, Thailand: March 25 - April 1, 2012


Last but not least, here are some pictures from our time spent in Thailand! We didn't do as much touring in Thailand as we did in Hong Kong and Indonesia. Instead we hung out at our resort on the beautiful beach and just relaxed for the last bit of our vacation.
