White Artichoke Spinach Pizza



One of our favourite weeknight meals is pizza.  It is quick, you can throw just about anything on it, and everyone loves pizza!


This pizza from Katie at GoodLife Eats takes some of our favourite items and puts them together to produce an insanely tasty pizza. Artichokes, spinach, cheese, and a creamy pizza sauce, yum!.  





The sauce for this pizza is unreal, and you won't believe what is in it!  The delicious creamy sauce is actually made with white beans so you get a great boost of protein with your meatless pizza.  I know a lot of people take part in Meatless Mondays, and this would be perfect!




If you have pizza dough ready in the refrigerator (or have a prepared pizza crust) then this can be whipped up in no time for a weeknight meal.


The sauce is enough for two or three pizzas, but it keeps really well in an airtight container in the refrigerator for when your next pizza craving hits.




Once again, I acknowledge the yellow-ness of my pictures in the winter.  Not only do I get home after dark every night (and cannot justify remaking a week's worth of recipes on the weekend for a 'natural-light' shot), I also primarily use my iPhone to take all of my food pictures (oh how I love that phone).  So this is the best I can come up with during the winter months, but the days are getting longer!  Hopefully I will be able to work with natural light again soon :)


The original recipe is from GoodLife Eats and makes one pizza.


White Artichoke Pizza

  • 1 pizza crust (or pizza dough)
  • 2 tsp olive oil
  • 1 leak, cleaned and chopped
  • 2 handfuls of fresh spinach, roughly chopped
  • 1/4 tsp dried italian seasoning
  • 1/4 cup white beans
  • 2 tbsp grated parmesan cheese
  • 1 cup quartered artichoke hearts
  • salt and pepper
  • sliced fresh mozzarella cheese
  • white bean sauce:
    • 1/4 cup cream cheese
    • 1/2 cup white beans
    • 1 tsp lemon juice
    • 2 tbsp grated parmesan cheese
    • 1 tsp dried rosemary
    • 1 clove garlic
    • salt and peper
    • 1 - 2 tbsp milk
  1. Preheat the oven to 450 F and place a pizza stone on the middle rack
  2. In a a food processor (or blender), add all of the white bean sauce ingredients and pulse until smooth. Add milk slowly until the desired consistency is reached
  3. In a small frying pan heat up the olive oil over medium heat
  4. Add the leeks and saute for about 4 minutes
  5. Add the spinach to the leeks and continue to saute until tender (about 3 more minutes). Set aside
  6. Roll out the pizza dough and top with some of the white bean sauce (you will not need all of it)
  7. Top the sauce with the spinach and leeks, then the parmesan, white beans, italian seasoning, and artichoke hearts
  8. Finish of the pizza with some slices of fresh mozzarella and then carefully transfer the pizza (still on the parchment) onto the pizza stone
    1. Note: I put the pizza and parchment paper on top of an upside-down baking sheet in order to transfer it easily
  9. Bake until the edges are brown and the cheese is melted. We like our pizza on the crispy side so this takes us 12 - 14 minutes
  10. Remove from oven, cut into slices, and Enjoy!

  1. I really do love making pizza for dinner! I buy fresh dough (have yet to make my own!) and load it up with sauce and cheese. I haven't ventured into any other kinds yet, but you have just inspired me! Yum!
