Rainbow Cupcakes


I found an image of rainbow cupcakes online one day and I knew I had to make them right away. I used the White Cupcake recipe from Martha Stewart Cupcakes, but any white cake box mix will work just fine too. These were so fun to make, and everyone loved biting into them and seeing the swirl of colors!


In order to create the rainbow, separate the batter into six equal parts and dye each separately into Red, Orange, Yellow, Green, Blue, and Violet. Just remember ROYGBIV from those elementary days! Yes, I realize the Indigo is missing, but mine just looked blue so i decided it wouldn't be missed. Is it missed? If using liquid food coloring, it will take quite a lot to obtain such bright colors. If using gel food coloring, a small drop should do the trick!

Carefully spread a thin layer of the purple batter on the bottom, followed by the blue, then green, yellow, orange, and finally topped with red.

Then all you need to do is bake the cupcakes as per the recipe, and you will have beautiful rainbow cupcakes!

After carefully preparing a dozen rainbow cupcakes, and realizing that not only did a significant portion of my evening pass by, but that I also had a large amount of batter left, I decided to do a different version of the rainbow cupcakes. They came out pretty nice too!

I just dropped random teaspoons of each color of batter into my waiting muffin pans, and voila! A new and exciting version of rainbow cupcakes! And produced in a quarter of the time too.
