Baked Peanut Butter Oatmeal



I saw this recipe on I Am Mommy this weekend and it turned out to be the perfect warm breakfast for our freezing cold weekend! Amanda of both I Am Mommy and I Am Baker originally found this recipe on Tidy Mom and she was so right to share it!


This was incredibly easy (and incredibly quick!) to whip up for breakfast.  Everything mixes up quickly in one bowl, and it bakes up in about 25 minutes!




If you want, you could also add chocolate chips or dried fruit to mix it up.


I dressed mine up with some Raspberry Preserves, which went perfectly with the peanut butter in this baked oatmeal.


Baked Peanut Butter Oatmeal

  • 1 1/2 cups quick cooking rolled oats
  • 1/4 cup brown sugar, packed
  • 1/4 cup white sugar
  • 3/4 cup milk (I used soy milk, and it worked great!)
  • 1/4 cup butter, melted
  • 1 egg
  • 1 tsp baking powder
  • 3/4 tsp salt
  • 1 tsp vanilla
  • 1/2 cup peanut butter (I used natural peanut butter)
  1. Preheat the oven to 350F and grease a 8" x 8" baking dish 
  2. In a large mixing bowl, add all of the ingredients and mix well
  3. Pour the oatmeal mixture into the baking dish, and spread it out evenly
  4. Bake for about 25 minutes, or until the edges are brown and slightly crispy
  5. Serve warm and Enjoy!

  1. This looks fabulous. I have been wanting to try baked oatmeal for a while now, but just haven't done it. Is it easily reheatable? If I made it the night before and then popped in the microwave?

  2. Hey Rachel! This is really good when it is reheated, the only downside is that you lose the delicious crunchy edges when you put it in the microwave :) I found this travelled really well to work and made a fantastic 'eat-as-you-work' breakfast!
